Cheese Bread

  1. Combine water, yeast, 250g flour, salt, sugar, and 13g shortening.
  2. Incorporate remaining flour 50g at a time.
  3. Cover with a towel for 10 minutes.
  4. Cut cheddar into 5mm cubes.
  5. Grease loaf pan with small amount of shortening.
  6. Knead cheddar into dough in small amounts until evenly distributed.
  7. Form dough into cylinder 20cm long.
  8. Place dough in loaf pan.
  9. Cover and rest in a warm place (~25°C) for 30 minutes.
  10. Heat oven to 220°C.
  11. Place loaf pan on low rack, so bread top is vertically centered.
  12. Bake for 22 minutes.
  13. Move loaf to cooling rack.
