1. Place cast-iron skillet in oven and pre-heat to 200°C.
  2. In a bowl, mix cornmeal and milk.
  3. In a separate bowl, mix flour, baking powder, salt, and sugar.
  4. Let cornmeal and milk mixture sit for 5 minutes.
  5. Combine the contents of both bowls, egg, and oil.
  6. Rub skillet with shortening.
  7. Pour mixture into skillet.
  8. Bake 15 minutes.
  9. Transfer cornbread to cooling rack.
