Oven Ribs

  1. Preheat oven to 150°C.
  2. Lay two sheets of aluminum foil atop a baking sheet.
  3. Place 3 small (~10cm) rings of crumpled aluminum foil atop the sheets.
  4. Thoroughly mix sugar, paprika, garlic, cayenne, and smoke in a large bowl.
  5. Remove membrane from concave (bony) side of ribs.
  6. Coat ribs in spice mixture.
  7. Lay ribs atop foil rings, concave side up.
  8. Lay two sheets of aluminum foil atop ribs.
  9. Tightly roll edges of all four foil sheets together.
  10. Bake for 3 hours.
  11. Remove ribs from foil packet.
  12. Cut into segments of 2-3 ribs.
  13. Lay segments on a baking sheet, concave side up.
  14. Brush concave side of ribs with BBQ sauce.
  15. Broil until bubbling.
  16. Flip ribs concave side down.
  17. Brush convex (meaty) side of ribs with BBQ sauce.
  18. Broil until bubbling.

Protip: 3 hours at 150°C is also great for baked potatoes. Coat russet potatoes in oil and salt, then place directly on an oven rack during the 3 hour cook time. Remove before broiling ribs.
