Praline Paste

  1. Heat oven to 150°C.
  2. Spread pecans across a baking sheet.
  3. Bake pecans for 15 minutes.
  4. Set aside to cool.
  5. Combine water and sugar in a pan.
  6. Heat sugar water to 115°C.
  7. Add pecans.
  8. Stir until sugar turns golden brown.
  9. Pour onto silicone mat to cool.
  10. Break apart into rough chunks.
  11. Blend in a food processor until a paste forms.

Protip: This paste can be folded into pastry cream to make a pudding or profiterole filling.
