Rice Sauce

  1. Combine oil, onion, cardamom, and cloves.
  2. Cook over medium heat for 10 minutes.
  3. Add butter, ginger, garlic, salt, paprika, coriander, cumin, cinnaman, garam masala, turmeric, and cayenne.
  4. Cook over low heat for 5 minutes.
  5. Discard cardamom and cloves.
  6. Puree with tomatoes and cashews.
  7. Return to pan.
  8. Add butter.
  9. Simmer for 15 minutes, stirring often.
  10. Add milk, sugar, and kasoori methi.
  11. Simmer for 5 minutes.
